Meet Makenzie!

Hello, my names Makenzie. I’m a Kansas native who just moved from Wichita and am the new SNAP-Ed Nutrition Educator for K-State Research and Extension DouglasMakenzie K. new SNAP-Ed Nutrition Educator County. I’m a registered dietitian and attended Kansas State and Cornell. I LOVE connecting with people and view cooking & eating together as a big connecting factor. I also see food as a connecting factor between the environment and people.  

At the end of the day, everyone deserves to eat. Food accessibility, helping people find health-promoting recipes that they enjoy & feel confident making, and helping people cultivate a healthy relationship with food are my passions.  

Food for thought: How would you describe your relationship with food? (Not what you eat- but your relationship to it- and what could make that relationship better). 

In my free time, I read, practice yoga, and enjoy spending time outside. I also have pet plants and a cat named Emmy who I adore very much.  

Below is one of my favorite recipes that have been in my family for years. It’s tasty, cost-affordable, and is an easy way to include vegetables & legumes into a snack! 

Aunt Nora’s Salsa 

  • 1 jar salsa, 24-32oz (usually I grab the mild one from Aldi’s) 
  • 1 can black beans, 16oz (drained) 
  • 1 can sweet corn (drained) 
  • 1/2 purple onion, diced 
  • handful cilantro, chopped 

Mix & enjoy!
